Elaboration

The must is fermented in French oak for three weeks in a temperature controlled winery at 14ºC. The wine is then aged in the same barrels for 9 months until bottling. Batonnage is used during the winemaking process.

Alcohol Content 13%

Cured meats, Ham, Seafood sauce, Bluefish, Fish with sauce, Smoked cheese, Goat Cheese

Aspect

Straw yellow with green and gold highlights.

Aroma

There are a lot of toasty and smoky aromas due to the barrel fermenting and ageing, mixed with fruity aromas such as apricot and almonds. Woodland undergrowth is also noticeable combined with touches of vanilla.

Taste

A smooth balanced palate. It is full-bodied with adequate acidity. The wine’s smokiness and flavours of fruit preserves stand out. It has a pleasant and lingering finish, filling the mouth with an agreeable taste of Chardonnay.
